Chef/Proprietor History

Club Ven Aca’s Executive Chef, Sofia Mileti, hails from Park City, Utah. As host to the International Sundance Film Festival and venue for the 2002 Winter Olympics, Park City has long been a platform for launching blossoming chefs and entrepeneurs like Sofia. Her parents owned and operated a restaurant and club in this world class tourist destination for 28 years and she has been been inmersed in the food, service, and tourism industry since early childhood. Sofia started her culinary career in her parents' restaurant, gleaning culinary skills from her mother and Mileti's talented kitchen staff . In her early teens she apprenticed under Chef Adolph Imboden where she learned French, German and Swiss cooking methods as well as expediting skills, and, under the apprenticeship of Chef Renee Moreno, she became knowledgeable in the art of catering and event planning.

Sofia grew up in a bi-cultural family, her mother being from Guatemala and her father from Texas; she spent her winters In Park City and summers in Guatemala. This life experience gave her a deep appreciation of the Guatemalan native culture, coupled with an awareness of a sophisticated tourist destination. Her formal university studies focused on Parks, Recreation, and Tourism and included an internship with Giorgio Armani at his world headquarters in Manhattan, where she created commercial environments and coordinated events for this megacompany.

Sofia's culinary style is a product of her exposure to Park City's diverse spectrum of restaurants and culinary mentors, her start in Mileti's Italian kitchen, and her exposure to Guatemalan cuisine taught by her mother, Carmen, and her Guatemalan nanny, Licha. Sofia offers all of her culinary and artistic expertise to Club Ven Aca' in a creative fusion of her skills, her cross-border history, her love for food and fine service and her passion for inventing and reinventing her own gastronomic experience.
